Food, Friends, and Winter Picnics

Growing up, we were part of a church where my family was fairly involved, especially in my parent’s Sunday school class. The class comprised couples, many of whom had kids me and my sister’s age. During the winter holidays, one Sunday morning, the class would skip church for what they called “a winter picnic.”  As it sounds, we ate outside on picnic tables in a local park, no matter the weather. The adults worked hard, cooking eggs, bacon, sausages, and pancakes. Over a campfire, they brewed hot coffee and hot chocolate while we kids worked hard sledding and having snowball fights. Before we sat down to eat, someone would share a short Bible reading and pray a long prayer thanking God for the food, which made us kids antsy to eat. At times, the weather would be brutal with heavy snow and wind, but somehow, no one minded because gobbling down the heavy breakfast warmed us.

The funny thing is that the pastor never minded that the entire class missed the Sunday message. Sometimes, he’d even show up for some food. The members of the  Sunday school class stayed close friends for decades, creating memories that lasted a lifetime.

Winter Campfire Pancakes

Ingredients

1 c. all-purpose flour

2 Tbsp. brown sugar

2 1/2 tsp. baking powder

1/2 tsp. salt

1 1/4 c. milk

3 Tbsp. butter melted

1 large egg

Mix the pancake batter in a blender at home. Pour into a plastic pitcher with a lid for transporting to the picnic site.

Over the campfire or camping stove, heat a 12-inch cast iron pan. Put a little oil into the pan and then pour your pancakes, approximately 4 inches in diameter. Allow to cook until you see bubbles, then flip the pancake over. Serve with maple syrup, fresh fruit, and whipped cream.

The Best Homemade Hot Chocolate

Ingredients:

  • 1/4 to 1/2   cup of unsweetened cocoa powder, according to preference
  • 4-5 cups Milk  
  • 1/4 to 1/2  cup of sugar, according to preference.
  • 1/8 teaspoon teaspoon vanilla

 

Pour the milk into a saucepan on the camping stove and heat slowly. Do not let it boil. Add the cocoa powder a little at a time, stirring constantly, then add the sugar and vanilla. Keep stirring. Serve with whipped cream.
